It's weird saying hello from Utah, but that's where I am at right now.  Just moved from Savannah GA area.  Mine name is Steve.  I like animals that have given their life for my sustainment and also happen to be delicious.  I'm in Tooele county UT right now.  I hope the Lord takes me back to the south, but until then....I'll be here.

Elevation here is 4300'.  I have  MEB 30" Electric Smoker Model # 20072415.  I have had it for less almost a year.  I love it.  I have recently ran into a problem with it though:  the smoker element doesn't stay on long enough.  It will smoke awesome for about 30 minutes.  There are no other issues with it.  No click.  Temp gauge works.  I wish I could control when that thing comes on. 

I'm not the most experienced smoker.  I generally just do brisket, ribs and chicken.  I am still learning, but recently I have accomplished something I have been aiming for over year:  to make a simple, delicious, low-hassle brisket.  I just wish it had a little more smoke flavor.  I want to smoke that brisket fairly good for about 2.5 hours.

So nice meeting you guys and if you have any pointers to this issue I got, that would be greatly appreciated.
