Hello my name is Eric from Tracy California. I am a construction operations manager, divorced and raising four kids at home. I have extensive experience with smoking meat, primarily with the charcoal smoker. However nowadays I live in an apartment complex, so charcoal and lighter fluid are out. However, One must adapt to their environment, so I am currently using a MES at 30 inches. I have been following this forum for sometime, and have been extremely impressed with several of the recipes and members. All in all, I truly look forward to being a part of this group.
