Hello from the Southwest

    Hi all. I'm Amanda. I've been lurking about reading up on all things smoking. I contemplated getting a smoker for a couple years and finally took delivery of a Masterbuilt electric 30" with the controls located to the rear on the top and a window. I'm hoping to have time to season it this afternoon and then do a first trial run sometime this week....either something like a cheese cold smoke or hot-smoked salmon.

    I'm in New Mexico. I'm not big into red meat, but I want to experiment with fish, shrimp, turkey breast, nuts, salt, cheeses, and caseless snack sticks.

    After seeing all the advice here, I went ahead and ordered an A-maze-n pellet smoker to go inside, so I've got that ready to go. Found a great deal on the Maverick et-732, which should arrive soon. I'm sure I'll have some questions as I go along!
