Hello. My name is Ray and I got started smoking meats when I got a Brinkmann Smoke n Pit from Walmart. Been using it for the last 10 years now, one of these day I will upgrade. My status would probably be described as Talented Amateur. People love my ribs and pulled pork, and I am branching out to chicken now (leg quarters are soooo versatile). Doing Smoked Duck and Turkey breast for Thanksgiving. Looking forward to being a contributing member.

Oh also, am a graduate of California Culinary Academy Got a Baking Certificate when I attempted a career change sometime back. Will go back that someday. People also love my bread, and I make a mean white chocolate cheesecake

Will be posting soon, but a this being Thanksgiving, a lot of smoking to be going on here. We have a two dinners: small family dinner on Thanksgiving-bigger get together on Sat. Tomorrow is Smoked Duck and some sausages and maybe chicken. Sat will be Turkey legs, some pork roast, hot links and whatever else I can convince my wife to let me do

My motto is " hey why waste the fire-throw something else on!"

Happy Thanksgiving
Merry Christmas
Happy Holidays to you all
