I've been smoking about 4 years with a 40" MES smoker. I've been grilling about 30 years. My immediate need (want) is to get into a larger smoker to handle events up to around 100-150 people. So, I'm starting to do homework and checking out different smokers. My tendency will be to purchase far too much smoker for my needs. I was looking at some of the Southern Yankee 4' 12 rack smokers + grill and accessories on a trailer. I still want the smoker, a grill, warming box and a few accessories on a trailer, but the SY still seems like overkill. I know they make a 3' smoker with 6 shelves. That might be about what I am really looking for.
I'm mostly interested in cooking for my church, and my motorcycle ministry events.
Anyone with a SY rig, I'd love to find out what your experience has been like. I'd really appreciate it if you'd fill me in. I'd also appreciate hearing from others that have a smoker similar to what I want. Learning the gotchas before purchase is always better than after the fact.
