I started smoking meat with a Brinkmann Smoke'NPit Professional in 1993. This is not to be confused with the thin, cheap, POS smoker they sell now.(this thing is HEAVY) I did the "usual" mods on it several years ago and it makes decent 'Q, but it really likes charcoal.!! Last year I built an UDS and hooked a Pitmaster IQ110 to it. Just load it with charcoal and a few apple chunx, throw the butts on, set the temp on the IQ110 sit back, drink beer and wait for it to spit out BBQ!! I also enjoy grilling with charcoal and....dare I say... my Weber Genesis 310. I would like to build a masonry smoker/grill in the near future.

Welcome Welldigger. We can't all be from upstate SC, so NC mountains is really close. I'm sure you will enjoy this site. Everyone is always eager to help and always very knowledgable. It sounds like you have considerable experience with your smokers, so I'm sure that you can also be helpful to others. Be sure to send some pics of your equipment and some smokes. Good smoking, Joe
