Hello Everyone from Missouri. I am an avid BBQ'er to start. I have developed Skills in BBQ from seafood and fish to beef, pork, chicken and wild game. I love the smell of smoke in the air. I am wanting to try my hand at smoking meat with a charcoal/ wood smoker and figured this was a good place to join after reading some pages about various things from smokers to smoking. I have been looking at several different offset smokers to even include the larger trailer smokers. (Would love to hit the completions later in life) I am a wild game hunter and already process my own meats and can't wait to even throw in my first stick of sausage. I am thrilled to continue reading on and gaining as much knowledge and advice from the rest of the group.
