Hi guys and gals, I'm Trey and I reside in Tomball Texas. I've been smoking meat for 25+ years and let me tell ya... I've been learning so much from the pros on this site. I LOVE IT!!! My experience is primarily with a wood fired (side box) smoker that I built many years ago. Recently however,  I purchased a 30" MES digital with a remote and I gotta say, the simplicity is kinda boring. You guys that have shoved wood in and stoked the fire know what I'm talking about. I mean we call it a "Gatherin' here in Texas and make a day of it. But, I have to admit the pork ribs I smoked last week were better than any rib I ever cooked on the old side box. Anyway, simplicity is sometimes a wonderful thing and I sure look forward to joining in on the conversations here at SMF.

Lots of great knowledge here for sure.

I was a die hard stick burner for 30+ years, and I still run it from time to time, but I've been loving my homemade electric.
