Hello from Texas

  1. Found your site through a search. Contained a lot of helpful info so I thought I'd join. I use a Brinkman Trailmaster with an of set fire box. I've been pretty successful with pork butt, but still working out the kinks on the brisket (not leaving it long enough). I use a thermo probe at the cooking surface to get an accurate temp read which leads to a constant battle trying to maintain temp. Glad I found you guys!

    Welcome Musepic pleasure to meet you. LOL..... The word for that problem with the Brisket is Patience. A wise Guru around here someplace will reiterate if you seem to forget.

    Its a great board, its has great folks and the knowledge flows...... Most smokers, grillers, and BBQer's hold all there secrets close. I don't think there is any secrets here. FYI the search engine is bustin at the seams full of great info, just ask and ye shall receive, and its gets pretty dang specific if you do.

    They easiest way to be able to duplicate, is notes. The best way to make it better if knowing what you did last time. You want to do a tweak, write it down so you'll remember what you had before and why you want to change something. If you have time come and ask for a Guru's help. Did I mention they are totally amazing?

    Well if I can help, just ask, but I recommend the Guru's help.
