Almost finished seasoning a new MES 40 first gen (20070311). Thanks to all of the great info found here, yes I understand what I may be getting myself in to. Ordered the cold smoke attachment. Still need to get the good probe. Why an electric smoker? Convenience over our wood smoker, and when it's 100 degrees for days on end here in this part of Texas, ya just don't really feel much like tending a fire. Look forward to learning much more, and contributing where/if I can.
