Long time lurker from Rowlett, Tx here. I haven't been smoking very long. About a year to be honest. But I have learned a lot from this website. I mostly smoke wild hogs that I trap at my hunting lease since they are so plenitful in my area. I tell my wife all the time that I can't believe something so ugly can taste so good. That is mostly because of the posts I have read on this website. Biggest thing I've learned is to go by temperature and not time.
 
welcome, LC! looking forward to elarning how they do it down in TEXAS. we don't ahve hogs up here in montana, but a lot of deer and pronghorn antelope - makes for great smoking!

Good to have you along. I've been reading about the problem with wild hogs around the country. I've got a plan. We now have plenty of wolves up here (although all the enviros don't think so), we'll ship some of them to the problem hog areas. Course some of them hogs look like they might come out the victor in the battle.
