Hello from South East Tennessee, today is my first attempt at smoking. I have the Masterbuilt 30" digital. I have two racks of ribs that have been going now for about there hours, I am using the 3 2 1 method.  I now have them wrapped in foil and will be taking them out of the foil in a couple of hours for the last hour unwrapped. Wish me luck.
 
Welcome to your new addiction... we all have it (the addiction)... I would pull one out after 1.5 hrs and check it... sometimes if smokers running a little hot 2 hrs will be too long... look for pull back on the bones... should be about a half inch or so...
