Hello folks,

The name is Rick and I'm 34 years old. I consider myself to be close to an expert when it comes to barbeque, but this summer I got hooked on smoking after lurking around on some internet forums. My current equipment consists of a Weber 22 1/2-inch kettle, which takes a lot of looking after to keep the temperature on par. Living in Sweden makes it close to impossible to buy a good offset charcoal smoker, so I'm probably looking at having to build one myself. I also feel I've simply outgrown the cooking surface on my Weber kettle.
I'd love to hear from others who have successfully built their own pits, and hopefully learn from their mistakes. There aren't that many building plans floating around on the Internet.

Anyway, great to be here. I'm looking forward to making some new friends here in this forum.

welcome to smf- we have another swede here somewhere. he has a great offset.any questions you have or maybe ya can order overseas direct from the factory..anyway,thers lots of info here on building. i bet ya find lots of useful info here. be sure to post some pics.

Well since you guys asked...
Apart from the standard pork ribs and whole chicken, I did try a moose steak, since I'm also a hunter. The result was absolutely divine. I used lump charcoal together with a few sticks of Swedish juniper (Juniperus communis). The taste of the smoke complemented the meat perfectly. Normally I use pieces of hickory, but for the moose I wanted something more "Swedish".
The cooking time was a little over 6 hours, and like I said, the result was awesome. I never knew you could do that kind of magic with a Weber.

Hi Rick,
I'm Justin living in Switzerland. I realize we're pretty far apart, but just wanted to let you know that in Germany they produce a version of the Oklahoma Joes smoker, but oddly enough they do it under the name "Cactus Jack". Switzlerand goes one step further selling (the identical smoker) it under the "Texas Ranger" brand...There isn't ANY info on Texas Ranger, other than the TV show! Regardless...it is possible to find them in Europe. But building one sounds pretty cool anyways. Good luck.
