I'm glad I stumbled upon this newsgroup! A little history of my smoking hardware:
I got my first smoker back in 1990, a Brinkman thing that was basically a charcoal grill with a water pan and a door thru which you could plop soaked wood chunks onto the hot coals. I then upgraded to a Masterbuilt maybe 5 years ago and was getting pretty good results, until a power surge fried the circuit board. I used the excuse to upgrade to a Cookshack Elite Smokette and have been getting even better at it, having successfully smoked prime rib dinners at Christmas Eve the past 3 years.
Now when I bought the Cookshack, I got an insulator plate so I could cold smoke. I bought it without any knowledge of how well it would work. My first attempt at cold smoking whitefish didn't work...it got too hot inside and ended up hot smoking (and had some seriously overly smokey tasting fish)
So now, I've 'upgraded' my cold smoking capabilities by going MacGuyver and converting the old Masterbuilt smoker box. Here is a picture for your laughter and enjoyment...Please excuse the oven/microwave combo stand...I was fresh outta cinder blocks, lol!
Looking forward to putting her to good use!
