Hella all,

My name is Matt and I am in the AF and stationed outside St. Louis.  2 years ago I started smoking on an offset barrel smoker and began to wonder why I had not started smoking earlier! After a few modifications and additional temperature probes, I think we have the barrel smoker down to how we like it. My wife and I have smoked 10 briskets, 14 racks of baby back ribs, 4 Boston butts, 2 whole chickens and a turkey, all in 2 summers (and the turkey at Xmas this year). I prefer my charcoal offset barrel smoker; however, this winter I purchased a Masterbuilt 40" electric smoker to smoke thru the winter but I am still learning the ropes on the electric side. I enjoy the work that goes into smoking on my charcoal smoker and the reward at the end.  I have used this website many times for ideas but I finally signed up for an account.
 
  Hi Matt. Glad you joined us. Now you can post some pics of all these great smokes! Any smoker that turns out meat the way you like it is a good one. They all have their ups and downs. Keep on smokin' !
