I currently live in Southern Maryland due to work but call San Antonio, Texas home! Since we moved to Maryland I’ve been using a small Brinkman electric smoker while we’re waiting to build our house and then I’ll get a real wood smoker – not sure which one yet, there’s a lot of good choices out there.

Growing up in Texas I’ve been around brisket my entire life and I think I’ve got that down pretty well. My main desire is to learn different ways to smoke different meats. We just bought a whole butchered pig and I’ve been fortunate enough to put down three Whitetail deer this year hopefully with more to come. The county I live in here in Maryland has an unlimited bag limit for does so I’m doing my best to fill my freezer.

I’ve already read some great advice on here and I’m still reading and searching but right now I’m focused on learning how to smoke a bone-in venison hind quarter for Thanksgiving next week – I think I’m going to brine it first – any advice or suggestions would be great! If not I’ll continue to read through the forums and use that search button!

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

Welcome from the Lone Star State. I understand the work situation. My little brother is in the oil field now due his old job closing and moving to Mexico. He's in Wyoming, North Dakota, or Montana....a whole new cold for us Texans.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
