Hello, new to the forum but not new to grilling and smoking meat. I like to use wood, charcoal ,or as of late, pellets. The wife and her parents prefer the lighter smoke profile the pellet smoker provides, and I like the set it and forget it convenience when I have a lot of yard work to do. When I have time I like nothing better to play in the fire and relax.....and maybe try to rid my fridge of a few adult beverages. I have been interested in making and smoking sausage and have bought materials to start a vertical smoker build. Smokers include wsm, reverse flow stick burner, and green mountain Daniel Boone and Davey Crockett, and last but not least the old reliable UDS.
