My husband and I are jumping into the world of smoking with a new MES 40 inch .  We are almost empty nesters,(youngest graduates college next month). I enjoy cooking, my husband enjoys eating, so we make a good pair. I work as a psych nurse and my husband works in computers..Nice to meet you all..Marilyn
 
Hey Marilyn!  Welcome to you and your Hubby.  Lots of folks here with your gear so be sure to ask any questions you have about the smoker, accessories, or smoking techniques for the different cuts and types of protein you'll put in your new toy. 

Enjoy the empty nest!  It took a little getting used to but we love it!

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.
I also have a 40" MES. Just a heads up most of the therms the factory installs in the door are way off. You will need a way to accurately know your cook chamber temp. I use a Maverik 732 dual probe remote 1 probe is chamber temp the other is meat temp. Once you get going you will probably end up like most people, and get tired of babysitting the chip feeder every 40 or 45 minutes, an A-MAZE-N smoker tray is the solution most people go with to eliminate that.

We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
