My name is Dan I am 34 years old and I am pretty much a beginner. I have always liked to grill, but never really took the time to understand it and do it the RIGHT way. I have a friend that is an amature Pitmaster, (if there is such of thing as an amature). He has really got me into grilling and smoking, and trying new things along with teaching me the right way. I have always been in love with outdoor cooking and I decided I needed to take it a little further and learn how. I have used my grill/smoker more in the last 6 months than I have the entire time I have been grilling. I hope I can say I am at least hard core enough and a true griller cause I do grill and smoke in all weather year round. Im not a just fair weather griller, I was smoking venison tenderloin last weekend in the snow, can it get any more hard core than that, ha ha. My wife thinks I am nuts, but when I am asked what I want for Christmas or other things involving gifts, I say cooking stuff. Last year I did get a new grill with a smoker box for Christmas (that I asked for). I must be crazy. I am planning on entering my first competition in about 9 months so I can start understanding what all is involved with competition grilling. Anyway, since I joined
Smoking-Meat.com I have taken the e-course and have already used alot of that info. I hope I can learn alot more from you guys on this site. So far I am a big fan of it and looki forward to being a long time memeber.

Welcome to SMF! This is a good place to find what you're looking for. There are even a few folks who are KCBS Certified Judges and others who have done competition Q-ing. They should be able to tell you what to expect.

I have to tell you, I have a Chargriller Pro with smoker box myself. I haven't done any kind of mods to it yet, but I think I am going to add a piece of 1/4 plate to even out the heat. Any recommendations are always welcome with me.
