Hello all, I'm Scott, 45yrs old, I live near Corpus Christi. Currently using an Old Country Over & Under. I'm not an expert... but I know my way around the backyard pit.

Welcome to the board, Scott! I haven't used mesquite in a while. I recently got a bag of Kingsford briquettes with mesquite chips in them, but I don't taste it very much.

aboard, lots of great information available. I have been known to use my share of mesquite up here as well.

Welcome PD! Lots of good info here. I used to cook for a living but quickly realized how little I knew about real smoking when I picked up this obcession. This site has been an unbelievable resource. Enjoy.

Welcome from a fellow Texan!  I grew up cooking with Mesquite, and I currently live in Mesquite, but I don't cook with it much anymore.  I am pretty much a hickory mixed with fruit wood guy now.  But, there is no other wood to use if you want to cook a skirt steak hot and fast for authentic beef fajitas!!!  I keep some on hand for just such occasions.

Nothing like driving down 59 south and seeing all that dried up mesquite. And not to mention the Kingsville strip of hwy. Hello from Houston

Welcome fellow Texan.... I cooked up a couple of Mesquite Chickens a few days ago... Normally I prefer  pecan or applewood .. But sometimes that robust mesquite on chicken calls your name. Again, welcome and hope to hear from ya.
