My name is Travis, I'm from South Louisiana (Kaplan, La).   New to the art of smoking, just purchased a Masterbuilt Dual Fuel Pro and seasoned it and working with it to get the temp control down to a science.  Here in about a week when I get off I will be attempting to smoke my first pork butt, injected and rubbed down of course.  I've gotten a cast iron skillet for the wood chips/chunks already and plan on using a bigger water tray as I've read people have done to make improvements. Also will be using a Maverick thermometer to get accurate champer temp reading and internal meat temp reading.  Will post my first smoke as soon as it happens!

You might want to practice with chicken first, keep your mistakes cheap while you learn your rig.

 If you are still having trouble getting the heat regulated you may want to invest in a needle valve regulator for your set up.

 Looks like we are finally getting a few days of winter here in south la.
 
Yeah I got one comin ordered it a couple days ago I got just the needle valve to go inline at the bottom of the smoker so I'll install it when it comes in and give it a try....Yeah finally some cold temps lol got the gumbo Rollin on the stove as we speak since there is smoked sausage in there I'll add a pic!
