Just saying hello , have been attempting smoking for years but never turned out the way I felt it should , too bitter , too dry , too over done , get the picture. So decided to join your forum and hope to have some success this summer , I have an electric smoke hollow and a master built XL looking forward to reading your post and trying your ideas .

I Have a 16 year old son who thinks every thing must be smokey and super spices (not a bad idea ) a 14 year old daughter who likes it bland and not so spicey and my wife loves smoked food as do I in the summer we live and cook out side most every day . We live in SE Michigan so now it's time to give it a try once again .
