Hi, I'm Braxton. We are getting my Dad a Weber Smokey Mountain Cooker Smoker 22.5 inch for his 80th birthday. We've never smoked before but love barbecue. Reading the reviews of this smoker there are a lot of passionate people about smoking. I'm glad I found this forum to help learn the art. We're having a lot of family over in a couple of weeks - even from the Philippines. I would love to put some chicken or beef in there and just knock it out of the park. I've read about a 3rd party setup where you add water to keep the moister just right. Do I need this? Or, does anyone have any recommendations on how to get the most out of this smoker. Are there any safety tips for beginning smoking? Ok...off I go clicking around this forum to learn something. Thanks.
