Just a beginner with BBQ. Today finished up a few slabs of ribs and a 5lb brisket. Had to fall back to my backup smoker (Brinkmann Split-Door) because my electric (Masterbuilt 30") control unit went on the blink (another is being sent). Good thing I always have a plan B, never want to do that much meat in an oven. I first got hooked on queing in Texas (same time I was taught how to make a good bowl of Red). Since I moved back up to Washington State I've been too busy to do any but decided to take the plunge again. My wife doesn't mind, but she thinks I'm crazy spending 10 hours cooking a brisket and then put it into the refrigerator overnight. Look forward to participating in the forum as I move forward with this. Take care. Bones

First off welcome bones to SMF. You'll like it here cause there are alot of people here that would just love to help you out in any way where it come to smoking meat. You should first look up the E-course here it's free and very informative. Well I see you already are getting the need to hang out here in this room with us and another thing is the wife doesn't mind. So hang in there and you'll be smoking like a pro in no time. One othere thing you need to learn is the Qview thing.

Does your wife think you are that crazy when you give her a taste of that smoked goodness?
Just wait until she starts wondering why you are taking several pictues of the smoking process and even the meat as you cut it!
