What a great day to find some smokin' friends!

I've been smoking for quite a few years, mostly by the seat of my pants!

I started out with a bullet style charcoal water smoker, then graduated by converting it to electric. After a few years of that my wife got me a new braunsfels wood smoker I've been using for years. After saving up my pennies I got a SmokenTex electric and have been using that for the past four years or so as well (just recently had to replace the heating element!)

I smoke mainly for the family (smoking a turkey for Thanksgiving has been a family tradition for over 10 years now). I've done pork shoulder, goose, chicken and turkey (of course), and we do a mean salmon. Have never done ribs (I'm sorry!), but will be doing that this winter - you can bet on it!

I'm now venturing out and discovering the wonderful ways of smoking cheese. We're starting a nut roasting business, and finding ways to broaden our offerings - so I figure cheese may be the easiest to start with.

Anywho, looking forward to making many new friends here!
