Hi everyone! My name is Wes and I live in Phoenix, AZ. I have been smoking for about 4 years on my 22" Weber Smokey Mountain. I have been shamelessly stealing tons of recipes from these forums for quite some time wanted to join in the great discussions going on. My latest venture with smoking has been cold smoking bacon with the AMNPS but want to try out other cured meats like pastrami and hams. I look forward to getting to know you all!
