Hi all, I'm Patti. We live in the very south end of the Willamette valley in Oregon. I have been lurking for quite some time and I think the level of wisdom on this forum is amazing. My primary interests right now are charcuterie, but I love all forms of bbqing/smoking/grilling/etc. I have recently "inherited" (ok, stole out of my dad's barn....)a Little Chief. I'm totally aware of their limitations but its been so much fun to play with! I last used it to put some smoke on a pork loin that i finished in the oven. Hubby was thrilled with it and now we have caught the bug! We are interested in trying some sausage recipes and I just bought some Prague powder online. Looking forward to getting to know you all!!!
 
Patti welcome to SMF glad you joined us. There are lots of sausage makers here from beginners to seasoned pros. Have fun and happy smoking and sausage making

Good luck the more you look the more "I gotta try that recipes you find" before long you'll have a longer list then time to do them

Howdy from a fellow Oregonian! SMF is loaded with a bunch of good things. The search feature works great and will usually yield many days worth of reading. Don't be afraid to show off your smokes!
 
Thank you for the welcome! I have already spent hours reading about curing alone! As soon as I make something worthy of a pic I will for sure post it. I am going to brine some pork chops hopefully tonight and smoke them probably tomorrow.
