I just found the website and forum the other day and am excited to learn more about smoking.  I have had my Visions Classic Kamado smoker for about 6 months and so far, everything I have made turned out great.  We also have a STOK Tower charcoal grill and a Kenmore 6 burner natural gas grill.  

 Next week we are going to brine and smoke a 15lb turkey.  We usually deep fry but thought we would try something different. Along with the smoked turkey, we are making a Seafood Jambalaya stuffed Turducken on the Kenmore grill.  It's going to be a fun day!

Looking forward to learning a lot about smoking.

If you can see my turkey smoke all the way up in Alberta, I think I'm going to be in big trouble!!

Welcome from SC, Larry. It's good to have you on this great site. For your brined turkey, search the newsletter for Jeffs buttermilk brine and butter rub. I'm going to do that on a spatchcocked bird for thanksgiving.
