Names John, I'm an expert at consuming smoked meats. Thought I would give smoking a try. I'm a back yard griller and now have a new 30" MES. Seasoned it last night and hope to get a brisket in later today. I've been lurking for a few days and decided to take advantage of the knowledge and experience you all so freely share. Thanks.

Sooner  John,to the SMF,and good luck with your Brisky. That's a mighty bold jump for a first time smoke,but if you are patient and deligent in your cooking,you may pull it off,and I hope you do.

     Nothing worse than getting frustrated on a first cook.Read the Wiki on Briskets and you will have a heads up start and finish in good shape

Yea and  Alabama has to get by a couple of groups of Tigers, some Lions, some Rebels, some Hogs and maybe a Volunteer or two. A lot of football to be played before January 2012  I wouldn't be buying hotel rooms in New Orleans quite yet.
