Hi all

Its a pleasure to join the forum, been reading for some time now. Love the set up and the topics.

I am an average smoker/griller. I like to experiement and usually focus on pork, deer, beef, and the birds. Really like a smoked duck, with some hickory or dove with apple wood, deeeeeelish! I will brag a bit and say my grilled chicken wings are dynamite.

This past weekend I put a few of my remaining deer loins on the irons and enjoyed those with a few cold ones and college football.

I use a Char-Griller with the firebox on the side, best grill machine I have ever used. Got that for Dad's day a few years ago. Here in Ohio we have a liberal deer season so I always have plenty of that, I also purchase a half-cow and half-pig once a year. My family is quite large: wife, 4 kids, and my 2 best pals, the dogs. So we obviously eat quite a bit.

Looking to expand my range with the hot iron, like to try some jerky and summer sausage some time. Also- love the dutch oven and gardening sections.

Hope I can add to the knowledge base, Thanks!

Welcome to the forum and enjoy. Where is Darby Creek?

I'm from Bellevue, near Cedar Point

Werd- Darby creek runs from Bellefontaine to Circleville and stays west of Columbus. Great smallmouth fishing, turtle trapping, and bow-fishing for carp.

Chicken wings-

We use the frozen 4lb bags, if everyone is home I usually go through 2 of these bags. Two boys, one a teen, the other pre-teen really know how to put food away! They must have got it from dad

So, grill them to desired crispiness, we like ours nice and crispy. The rest is in the sauce. Our two family favorites are traditional wing and oriental bbq. There are others we have tried but these are the two favorites.

Trad. Wing-Franks red hot, butter, white vinegar, pepper. Add a few chile peppers for some suicide wings if you like.

Oriental bbq- garlic, teriyaki sauce, homemade bbq or Bull'seye bbq, and Spicy Szechwuan sauce (we buy it at Kroger's). Mix varies depending on how thick/thin or spicy/mild you like it. I add a bit of vinegar and pepper. Add brown sugar if you like sweet flavors.

Put grilled wings in a bowl, dump in sauce, cover, shake well, enjoy!
