I do a lot of BBQing and always want to try smoking meat. Made the plunge with a Weber 22.5 SM, bought a maverick 733 dual thermometer, weber chimney and leather bbq gloves.

I am using royal oak wood charcoal, have apple and jack Daniel oak wood chunks. Have smoked ribs, which turned out a little too smoky, over did it on the JD lack chips. smoked a turkey and a brisket which both turned out great and have another set a ribs on as we speak.

My gas grill is a Weber Genesis S 320, like it a lot! Have had it Five years. Plan to build an outdoor bbq Center in the summer to include all my grills, work area, running water and beer fridge.
