Hello all....just wanted to introduce myself and say thanks in advance for the answers and advise I'll be getting I hope.   I've been cooking, grilling and smoking for 20 years or so and just purchased my first dedicated smoker.  I bought the Smokin-It #3 after doing a fair amount of research and reading through the forum posts.  I had been using my Big Green Egg to smoke but needed a larger smoking capacity.  In addition to smoking, I also make my own jerky and dehydrated fruits and vegetables.  I'm looking forward to learning and sharing with you all.  Here's to summer coming soon  :)

Thanks Gary and it's nice to meet you.   I spent 3 1/2 years working in Houston which is where I discovered my love of BBQ and smoked meats.  It's hard to find great BBQ in NJ which is why I started making my own.
