Hello everyone, Mike here. I've been a huge fab of BBQ for many years and I love to cook. I just purchased (not arrived yet) a Traeger Texas grill, I added the insulation blanket (It's cold in Northern NM) as well as the cold smoking chamber. I purchased a pellet smoker cause we don't have much access to hard woods here.

My plan with the smoker is to add some NM flair to the meats that I smoke, but I also plan on many pounds of traditional style everything. I look forward to online chats with everyone, I know there's a ton of experience on here :)

My first plan is chicken (brined) and some ribs.

Welcome to the forums Mike!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
