Just wanted to say hello from the midwest. I hope to learn from a lot from all of you about this craft. I just purchased a ECB charcoal smoker unit. I haven't smoked anything yet in it. Just been researching some ideas before I give it a go as I don't want to mess up but from what I'm reading thats part of the journey. This sites and users are amazing I've been typing random thing in the search for ideas on mairnade and spritzes and there seems to be thread for about anything. Coffee, tea, elm wood for smoking. I've been wanting to try unique ideas for smoking that other might not do and to most of you this is normal. I plan to try smoking something this labor day if I can

Go for it dude! Ive got a charcoal ecb as well and I'm having a lot of fun with it. If you have a drill I would highly reccomend putting some holes in the bottom of your fire pan. I used it a few times without doing this and you will go through a lot of charcoal if you dont make a few changes. Also you can use a grate off of a small grill to allow spent ashes somewhere to go this will keep ash from choking out your lit coals. Happy smokin!

Thank you for all the warm welcomes. Smokinstevo27 I plan to drill the holes as I was surprised that there where no holes for air flow when I purchased it. Thanks for the tips on the small grate. I'm going to be trying a few ecb mods as I have time.

First off Welcome Holt to SMF. From a proud father with a once Marine but now Army son.
