Thanks for the add to the group! Chuck - 33yrs old. far from a skilled smoker but pretty decent in the pork category. I'm looking to do some snack sticks and some summer sausage with the game I have so this willl be a change of pace! First up 21 or 19mm collagen cased goose/cheese snack sticks. Any help would be great. Not that familiar with approximate smoking times. Masterbuilt electric smoker 6 racks. I will be using all six racks. (10lb batch) thanks y'all

 You shouldn't have anly problem with finding the info you're looking for? You found a Great SMF with lots of good stuff posted and members who are more than will to jump in and help you at anytime.

As a newbie myself I hear you clucking there Big Chicken on all the info posted!   The best part of all that info being posted is that you have a large number of SMF members who are available and more than willing to jump in a assist you or point you in the right direction.

Yes there's a lot to follow up on. I love my standuo charcoal smoker for smoking ribs, shoulders/butts. I currently bought a MES 30 Bluetooth smoker and wanted to use it for a little more controlled environment for snack sticks and summer sausages. I think I've learned quite a bit in one day but I'm going to continue to read and search.
