Hello from N. Idaho

    Just found this site this morrning, what a mind boggling amount of information!

    (which is great because the 10 or so attempts at brisket has resulted in a 98% failure rate..thats a conservative estimate).

    Anyways, I have always been more a char griller and have enjoyed a more than a fair amount of sucess, (no passive brag, I promise) but my attempts at smoking have been more than a bit...eh humbling. 

    I had a barrel smoker for about 10 years, but I mainly just used the barrel for grilling because I could get a ton of food on there rarely did I ever use the firebox...just sort of glanced at it distrustfully from time to time. 

    Last year I finally burned the thing up...so the wife and I went shopping...came home with a hybrid. (gas and char).

    My wife, excited that we would be able to grill during our severe winters (read faster and easier) with the handy little gas feature...was properly pissed when 2 days later I appropiated the gas bottle and lines for my camp chef...

    So the warmer months are here and changing up the menu is in my cards...allow me to explain...

    There is only one BBQ joint in town and just recently my wife has sampled some of his smoked brisket and whatever else came on the plate for the cool tune of $20, as I'm told.

    Needless to say I wasnt jumping for joy over hearing about another guys BBQ (I'm sensetive like that,) nor was I thrilled over a $20 lunch (I'm cheap like that.)

    So....I was given a friendly reminder that I had a perfectly fine fire box attached to a burned out hunk of metal behind the woodshed...fine, okay, after a bit of hateful choice words, a drill, torch, cordless impact and a sawzall I had that thing off and on the new one. ( did I mention the 6 beers?...no? well it took six beers as well)

    Next weekend I fired up my open pit and burned down a bunch of tamarack and started shoveling coals into the thing, got it up to temp by feel because the temp gauge on the new grill didnt work...go figure.

    Threw on some babybacks, long story short....They were awesome! So good my wife aint having any ribs down at the other fellahs place.

    Fast forward to the brisket last weekend...full of bluff and bluster and confidence did I throw that sucker on, flexing my BBQ muscles, grunting and grinning for any possible bystanders that may want to inquire as to my secrets, techniques....or as to why my wife is down the road at the BBQ shack having brisket...

    and that is why  I am here...

    Welcome. I live just north of you in southeast BC. You will love this forum. I too was a griller and still love it. But I retired and got a smoker late last year. My first couple of butts were less than stellar. Then I found this forum. There is so much info and there is always lots of helpful advice to questions. The difference was amazing. I am now trying many different items from the inspiration of this site.

    I'm sure the forum will improve your smoking too. Beware though, you will become hooked.

    @MrT, just south of CDA.

    Spent a good portion of this morning researching vertical smokers...wow!

    Have my eye on one...might take a few months, but I hope to have it by mid summer!

    Glad you joined us David, :welcome1: from North Dakota!
    A used Weber kettle off Craigslist will get you started learning temperature control until you can get the one you really want. Also a Weber kettle is handy to always own and you might change your mind as you get into smoking on the smoker you really want now.

    Good advice there! Was pretty much decided on picking up a weber kettle for my grilling and learning curve. Might just happen to be a coincedence(can never spell that word) or subliminal reinforcement from all the members "sigs". gGot my heart and wallet set up on a particular vertical though and the cookie jar is on the counter!


    There is a WinCo going in on Northwest & Appleway...
