Well the smoking season will be winding down up here in the tundra soon, but that doesn't put a chill on the thrill of the cook! I have been tinkering around with smoking as a hobby form some years. I started with smoking on a BBQ - charcoal and gas, moved to a smokey joe cylinder water smoker I converted to electric (mistake!), got an offset charcoal/stick burner (a purest) and now to a Traeger pallet smoker. I must say my biggest challenge has been perfecting the Traeger. Patience is the key. I'm looking forward to all the expertise of true smoking epicureans to help me with tips and tricks and to be able to share some of mine.
