hello from Maui, Hawaii

    Names Dan millwright by trade will build an thing at least once, been smoking for about a year now and still learning.First smoker was an homemade upright firebox under made from an old air tank, owned about a month to small gave away.smoker #2 upright 100 gallon air tank, tank streched 16 inches to increase size duel fire box wood on the side gas burner under another homemade job. Still looking for a bigger tank.burn mostly kiawe wood said to be the same as mesquite or bag lump charcoal.got my rib roast and turkey mastered still working on my pull pork and brisket. glad i happened upon this most wonderful site.

    You'll learn a lot here----These guys & gals are GREAT !

    Spent a year on Oahu, after Vietnam (August 69 to August 70).
    Favorite place to eat was "The Rigger" in Honolulu. Wish I had their recipe for the Teriyaki sauce they made for their steaks!!!! Never had anything before or since even close to as good as that was !

    Welcome Dan, good to have you with us. Spent several years in Hawaii myself, late 80's. Schofield Barracks on Oahu. Lotf of good info for you here. Also, we have an exchange program here where you trade with other members. Would sure like to get some of that Kiawe wood. We would use that when we had bbq's at the airfield, awesome stuff.

    Meathunter....Kiawe is great wood, and I think its the same thing as mesquite...It may be hard to ship Keawe legally out of Hawaii. I used to work as a part time inspector with the US Dept. of Agriculture, and if I remember correctly, any agricultural products that were to be taken back or shipped to the mainland had to be inspected and approved.

    Just thought I'd mention that so as to not cause any anxious moments down the road.

  18. Kiawe is is different from Mesquite. Kiawe is from Peru. Mesquite comesfrom N.Mexico. I grew up using Mesquite, live in Maui now, I love Kiawe, to me a lil sweeter. A good pc of wood will have a lil of the blossom smell to the smoke. Sweet and peppery taste.
