I have been a CASI chili cook for 5+ years and then thought I’d like to try BBQ comps. In 2008 I decided to take Paul Kirk’s BBQ class to see where I stood next to the big boys of BBQ. I needed to know from the best what my chances were before investing a lot of time and money in something that I just might not be ready for. Turns out he thought I was pretty good and told me to get out there and start competing! My husband and I formed Black Cat BBQ and shortly after that entered our first comp in July of 2008. We are now finishing up our first full competition season and look forward to next year!! My brother (ALX) has occasionally joined us at comps but mostly works the garden growing the various peppers that I need to make my rubs and chili powders.

There are lots of great recipes and techniques to learn from on here and I look forward to reading more!

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...
