Hi all, The name is David, reside in the city of Westwego, La. which is a suburb of New Orleans. I once told someone I lived in Westwego and their reply was, "Ahhh the city of seven smells". Since it was founded as a fishing community and located on Bayou Segnette, it has a rather large outdoor market for fresh seafood straight from the boats which caters to the New Orleans area. Naturally one of the smells is seafood, both fresh and not so fresh, another one of the smells is fried or boiled seafood from the area restaurants. One can get a sensory overload if they rode through the city around dinner time which I like to do on my motorcycle. I just realized I joined this forum over 7 years ago and never introduced myself or made a single post. I have been accused to being slow but 7 years is a record for me.lol In 2008 I was researching building a UDS and I have been hooked on smoking since, my favorite dish is smoked Butts and I use my UDS often. My sons and their families love the smoked butts so much they each built their own UDS once they married. Recently had the urge to build a wooden smoke house to smoke homemade sausage and andouille so I have been researching and reading all the threads on them.
