Hello Everybody,
I'm green on the smokin' scene. I have never intentionally tried to smoke any food, and got interested by looking at building a brick smoker(http://www.ibiblio.org/lineback/bbq/wdh.htm). I plan on retiring in a few years, and will have plenty of time to spend looking after the food. And I'm not sure this is the way I want to cook on not. I think I like the project of building the most.
But until then, I'm going the try to learn how to do some cookin. As a matter of fact, my smoker MES 40 is being delivered from Sam's on Thursday. I'm also planning on ordering AM NS in the near future.
What would you recommend for a newbie to cook on the first outing I was thinking bout some ribs. Do I need to "burn in" the cooker first? Any help would be appreciated.
