Good morning,

My name is Alan and I am a newbie at smoking meat from Topeka, Kansas.  I have recently bought a 40 MES from Sam's Club and have began to experiment with it.  So far so good.  I have even gotten my 7 year old son to help and he loves the smoker and so far everything we have made in it.  I love the advice in the forum and cannot wait for my next smoking adventure.  I am a firefighter here and my crew is anxiously awaiting the day I bring the smoker to work.  However I want to make sure I have a bomb-proof recipe for ribs before I smoke for them.  (Firefighters can be a tough group, tradition has it you never compliment the cook, the best you will ever hear about your cooking is "this is horrible, try again next day and see if you can get this right" that is code for I loved it and make it again soon.)  Hopefully I will be smoking at the station before the snow hits.  I will keep you posted as to my progress in this wonderful adventure.

For Ribs, I'm not the right person, I specialize in whole chickens. But when I do Ribs,

I have had the best luck with the 3-2-1 method. I use Jeff's rub a little modified and

sometimes even just slather them with Sweet Baby Rays over night and smoke em up.
