Hello....My name is Joe...and I like to smoke meat...(Hi Joe)... I have been intentionally smoking meat for 5 years. Unintentionally for 5 years before that. My unintentional years were making Beef Jerky and I was drying them either over a grill while cooking burgers or a small fire pit I had in my back yard. It just didn't dawn on my that I was smoking as well as drying the jerky. I started with my "R2D2" Smoker....a Brinkmann Smoke N' Grill Charcoal Smoker and Grill . Learned the basics, and realised I like it and wanted to try more then what was being smoked. I now have a Brinkmann Smoke N Pit Charcoal/Grill Smoker that I have been loving. I was a meat cutter at a previous job, and have learned how to make sausages and am starting to get into making Anduille and Charizo smoked spiced sausages, as well as Brisket and Pork shoulder. Also learned a couple tricks on how to smoke cheeses without a melty mess. I am looking forward to reading and learning from other smokers on the list.
