My name is Mar and I'm fairly new to smoking. I bought a Texas Traeger on Black Friday and so far is amazing . I have been smoking almost every weekend. My goal is brisket I tried a 4lb yesterday but failed was to tough. Hopefully I learn the tricks and much more here.
 
I have done probably 8 briskets in the past 2 years.  After the first one, which was tough I learned to be patient and make sure my briskets reach 195-197 internal temp before I pull them.  I also foil mine at 165 IT.  good luck on future briskets.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it.

Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

I am a member of the group and would love to have you join us!! I have not done brisket yet but from everything I have read I would have to agree with Bear55 you probably just did not get it done enough. It will be done when you can stick a toothpick into it and it slides right in with very little resistance, like sticking it into butter.

Always remember the only dumb question is the one you don’t ask!!
