Newbie from Iowa here.  I've been smoking (casually) for about 4 years.  I started with a Traeger pellet smoker and love the ease of use, but it doesn't give much smoke flavor.  So last fall I bought a Cajun Injector electric smoker.  Not nearly as easy to use, and only goes up to about 275 degrees, but gives some great smoke flavor.  My specialty is wings.  I season them with my own seasoning (equal parts of onion powder, chili powder, garlic powder, black pepper and seasoned salt) and smoke them at 225 for 90 minutes, then another 30 minutes at 180.  Then I throw them on the grill for about 20 minutes to make sure they're done and crisp them up a little.  I dip them in Famous Dave's Devil's Spit and I'm in heaven!

Other than smoking I like tinkering with my cars, golf, electronics, and computers...I'm a geek!  I retired in April 2010 and have never regretted it.  I don't understand people that don't retire because they 'have nothing to do'...sheesh, there's a world full of stuff to do!
