This is my first post as recommended, My name is Rodney, a 55 year old adolescent from S.E. Iowa down on the mighty Mississippi River. I have never smoked anything! I bought a Cajun Injector smoker at the local farm store a while back,thought I needed something else to do as we can't ride our motorcycles during the winter. I did season it as recommended with hickory chips, bought a turkey and a pork loin. I was going to fry the turkey and smoke the loin but unfortunately the weather was rainy for Thanksgiving and I had to postpone which really was a blessing as I knew nothing about smoking meat other than I like to eat it. Anyway enter my job which takes me to China and Germany frequently, I am engineering director for a German company making fittings for tempered glass installations. I left for Guangzhou China right after Thanksgiving for 3 weeks and fortunately found this forum but was unable to join at the time I think because it doesn't like a Chinese foreign IP address. Now that I have returned to the states I was able to join up and say hello. So while in China I spent my free time reading this forum, I must have been the only one on the planet that did not know about the MES smoker! Hopefully the Cajun Injector will do the job too. I was lucky enough to to find Todd and his AMPS on the forum, I was wondering how you keep the smoke going, Todd got me all set up with the AMPS several types of pellets and the remote thermometer setup. Had a little trouble with paying him through Paypal coming from China but he took care of that too. Great communicator. So now back to the turkey which now I think I will smoke too and get another one for frying as well as that pork loin for Chrismas dinner. I have all the stuff and plenty of info thanks to y'all.

Welcome to SMF. I'm a nOOb on this site also, but everyone gave me such a warm welcome I felt I should return the welcome. I have found this forum a wealth of knowledge. Read all you can and ask whatever you need to know, there will be an answer coming. Again welcome.

First off welcome to SMF there Rodney. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
