Greetings all! Been smoking for a couple years, but doing it as best I could on a gas grill, until today! Just got an "Old generation" (still unsure if it's a Gen 1 or Gen 2) MES30 yesterday, and will be using it for a chuckie today. Most of my previous work was done with pork (chops, loins, shoulder), which I've found to be easy to work with, even on a grill used to smoke. I'm hoping to expand with the MES. When I'm not smoking, I'm road trippin. I've taken my JEEP and my dog through 49 states since 2008, culminating in a 3 week, 10,000 mile trip including the wife and our TT to Alaska last year. I found SMF a couple weeks ago, and can't believe the depth of knowledge dropped here. Just incredible! I'm certain that with the MES and the tutelage available here, I'll be turning out some awesome smoked goods for years to come.

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a Kindle Fire, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per Jeff. Not that you have done anything wrong....just a little bit of FYI for new members!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

You are definitely right about the amount if information here. I just started smoking last fall and had little success until I found this forum. Everyone had been so kind and I have learned so much. Even better, I have a list of projects that I want to try that will take me years to get through.

Hello Coffaqcof, and welcome aboard!  You'll like it here...lots of friends and family who are always ready to help out.  I'm envious of all your traveling...Mrs. Red and I are hoping to be able to do that ourselves one of these days.
