Well I am glad to be a part of the site. I hope I can learn from everyone and share my experience as well. I have been smoking for a few years now. Mostly bacon, which I feel I have nailed pretty well. We can't buy the store bought stuff anymore except the small market stuff that I use to make bacon jam!!! Right now I have a batch of kielbasa getting ready for the smoke tomorrow.
We are also BIG fans of the Best of the West rib cookoff in Sparks, Nevada. Haven't missed one in 6 years.

Ob yea, i use an MES and just love it for the type of stuff I do.
One of these days though I would like to make a cold smoker for cheese and fish and such.

Welcome dougwhite. Glad you found us. We look forward to your Q-view! Just so you know, you can cold smoke in your MES if you add an A-MAZ-N smoker to you list of equipment. It is made by one of our members and works very well. Check out his add on this site.

Thanks Gary! I should have some pics to post in a bit once the kielbasa comes out of the smoke. At about 113 right now and coming along nicely. What a place!
