Hey everyone, I moved down to Alabama from Minnesota about a year ago (working for the Army). Love all the smokers going in the neighborhood...so decided to get one put together. I have a metal worker relative that is building it...sort of an A-2 model...making some changes to his. It will be gas fired vertical water smoker 20x20 x48 tall. 4 or 5 food grade stainless shelves and a 30,000 BTU burner to start (hope its enough or not too much).

Anyway I should have it by the weekend and get it seasoned...any first timer hints, processes etc would be appreciated.

I signed up for the 5 day class but I didn't get Day 3...do I just sign up for it again and hope to get that one?

Thanks again and will try to post some pics when I get it.

Welcome To Your New Addiction

Yes, we are liking it so far. A big change from MN, but no snow to shovel or blow is nice. Family is a long way off, so that makes for some long road trips with the kids. From Michigan? We have a number of friends from there that moved down. At least there is hockey here :) Kids like that...
