Hey all, my name is Dave and I love smoked meat. About 12 years ago I borrowed a brinkman smoker from my dad who didn't use it. I smoked chickens, CSR's, and several turkeys. I loved it. The turkeys were the best I'd ever had. I ended up having to give the smoker back and just never got around to buying one. Had a wife and four kids at the time and money was tight.
Well here we are in 2013 and now I'm single with two kids at home. I love grilling and my kids love my food. I spent a couple of years learning about regular and gourmet cooking but still ended up spending most of my time over my weber kettle. I remembered how much I enjoyed using that cheap smoker and decided it was time to get back into it and learn how to really smoke some meats.
I got on Craig's list and found an older charcoal gosm for 50 bucks. I bought it. It was in great shape, just needed a cleaning and a new paint job. After getting it ready I ran a load of charcoal through to see how it would hold temp. After hours of reading here on the forums I figured out she definitely runs better on lump charcoal maintaining 225 steady for about 4 hours. It does need the door seal trick I found on here but haven't ordered it yet. Also the temp gauge is shy about 20 deg.
I'll be smoking some CSR's tomorrow and already did a search and found some great tips, thank you. I joined 4or 5 days ago and have found myself reading posts for several hours at a time. Man you guys really know your stuff. Thank you all for such a great community and bank of experience and knowledge.
I'm happy to be a part of a group that when its our time to go, will probably be most happy if we are just buried in our smokers.
